The region of Puglia in the heel of Italy is known for its warm climate, sun-drenched white villages, ubiquitous olive groves, the trulli of Alberbello, and stately masserie (basically a Pugliese agriturismo.) Cisternino, tucked in the Valle d'Itria, reveals another surprise from Puglia. Amidst its tiny alleyways and piazzas, there lies a unique food experience: the fornello pronto. These are butcher shops where you choose from a selection of meat and have it grilled for you in enormous ovens on the spot! Several years ago, I visited one and they generously allowed me into their kitchen to take a closer look.
